Rhubarb and ginger jam - dżem rabarbarowo-imbirowy

Rhubarb is making return to our kitchen! It's tangy flavor is usually mixed with sugar and used in cakes or pies. I am showing you my recipe for rhubarb and ginger jam. It's perfect on toast or crusty bread with cup of tea in the morning.

Ingredients for 2 jars like on the picture:
450 g of fresh rhubarb stalks
430 g sugar
juice of half lemon
1 tablespoon of water
thumb size fresh ginger - grated 
2 sterilized jars

Method:
Place the saucer into the freezer.
Wash and trim rhubarb stalks. If it is big you may want to remove the outer skin layer, which can be too fibrous. Cut into small pieces. Put the rhubarb, ginger, water and lemon juice into the pan and bring to the boil. Simmer gently for about 10 minutes. Take off the heat and add the sugar. Mix it until all sugar is dissolved and continue to boil quite rapidly now for further 10-15 minutes. After that time take out the saucer from the freezer and put one teaspoon of jam onto the cold surface. Run your finger through it and if it stays separate - the jam is ready. If not - boil for few more minutes and repeat the test.
Once the jam is ready, transfer it to prepared jars and close immediately. Enjoy!



W polskiej kuchni rabarbar jakby trochę odszedł w zapomnienie. Mam nadzieję, że powróci na nasze stoły tak jak to się dzieje w Irlandii! Zazwyczaj stosujemy go w połączeniu z cukrem do różnego rodzaju ciast. Ja dziś mam propozycję dżemu rabarbarowo-imbirowego. Świetnie smakuje na tostach albo bagietce do porannej herbaty:-)

Na dwa słoiczki takie jak na zdjęciu potrzebne będzie:
450 g rabarbaru
430 g cukru
sok z połowy cytryny
1 łyżka wody
świeżo starty imbir wielkości kciuka
2 wysterylizowane słoiczki

Wykonanie:
Do zamrażalnika wkładamy mały spodeczek.
Przycinamy końce rabarbaru i ewentualnie obieramy ze skórki. Kroimy w mniejsze kawałki. Do garnka wkładamy rabarbar, starty imbir, sok z cytryny i wodę. Gotujemy na małym ogniu przez ok 10 min. Potem dodajemy cukier i dobrze wszystko mieszamy. Doprowadzamy ponownie do wrzenia i gotujemy przez 10-15 minut. Po tym czasie z zamrażalnika wyciągamy spodeczek i wykładamy na niego łyżeczkę dżemu. Jeśli po przeciągnięciu palcem przez środek obie części zostają osobno - dżem jest gotowy. Jeśli nie, gotujemy dalej i wykonujemy kolejny test. Gdy dżem jest juz gotowy, przelewamy do przygotowanych słoiczków i od razu zamykamy.
