Tomato, basil & Parmesan quiche - Zapiekanka z pomidorami, bazlią i Parmezanem




This quiche is really delicate in taste. The filling is like a fluffy cloud of goodness. It is perfect lunch option, something you can take to work as it tastes great hot or cold.

Ta zapiekanka jest bardzo delikatna. Nadzienie jest jak puchata chmurka. Jest to idealna propozycja na lunch, coś co można zabrać ze sobą do pracy, gdyż smakuje dobrze zarówno na gorąco jak i na zimno.

We will need:
a pack of shortcrust pastry ( ~350g)
bread crumbs, for dusting
300g cherry tomatoes
olive oil
2 eggs
300ml double cream
handful basil leafs, shredded plus some more for decoration
50g Parmesan, grated

Potrzebne nam będzie:
paczka gotowego ciasta kruchego (ok 350g)
bułka tarta do wysypania formy
300g pomidorków koktajlowych
oliwa z oliwek
2 jajka
300ml tłustej śmietanki
garść posiekanych liści bazylii plus kilka całych do dekoracji
50g Parmezanu

The method:
Heat the oven to 180C. Butter the tart tin and sprinkle some bread crumbs. Put the pastry into the tin, leave the overhang pastry.
In a roasting tin, scatter tomatoes with olive oil and season with salt and pepper. Put in the oven, onto the lower shelf. Blind bake the pastry for 20 minutes (tomatoes are roasting in the same time). After 20 minutes, remove the baking beans and return pastry to bake for further 5 minutes.
In the meantime, beat the eggs and slowly add the cream. Stir in the basil and season.. When the pastry is ready, remove it from the oven. Sprinkle half of the parmesan over the base, scatter over the tomatoes and pour the cream mix. Than sprinkle the rest of the parmesan on top. Bake for further 20-25 minutes. Trim the pastry. Serve with salad.

Wykonanie:
Rozgrzewamy piekarnik do 180C. Wysmarowaną tłuszczem formę wysypujemy bułką tartą.  Ciasto przekładamy do formy i zostawiamy nadmiar. Najlepiej jest przycinać ciasto już po upieczeniu, gdyż wcześniej może się skurczyć.
W osobnym naczyniu skrapiamy pomidorki oliwą i doprawiamy solą i pieprzem. Pieczemy na dolnej półce piekarnika. Ciasto podpiekamy przez ok 20 minut przykryte papierem i groszkiem ceramicznym.
Po tym czasie zdejmujemy groszek i pieczemy jeszcze 5 minut.
W międzyczasie miksujemy jajka i powoli dodajemy śmietankę. Dodajemy bazylię i doprawiamy. Gdy ciasto jest gotowe, posypujemy je połową startego sera i wykładamy pomidory. Wylewamy na to kremowy mix. Posypujemy wierzch resztą sera i pieczemy 20-25 minut. Po upieczeniu przycinamy ciasto. Podajemy z sałatą.
