Pear and Vanilla Cake - Ciasto Waniliowe z Gruszkami

This moist, slightly sweet cake is perfect for weekend afternoon tea. It is very hard to resist it when the mouthwatering fragrance of vanilla wafts through the house.


Ingredients:
500 g of pears
1 tablespoon of Williams liquer (optional)
juice of 0.5 lemon
75 g of brown sugar
75 g of flour
1 heaped teaspoon of baking powder
3 eggs
pinch of salt
50 g of melted butter plus extra for the tin
1 teaspoon of vanilla paste or seeds scraped out of one vanilla pod

Method:
Heat the oven to 170C (fan). Prepare the round cake tin.
Cut the pears and add the lemon juice and Williams liquer if using. Leave them on the side.
Beat the egg whites with a pinch of salt slowly adding sugar. Follow by the egg yolks, flour, baking powder and vanilla paste. Add the pears and all the juices to the batter. Transfer to the baking tin and bake for 50 minutes. Let it cool for few minutes and dig in. I know you won't be able to resist any longer :-)



To wilgotne, lekko słodkie ciasto jest idealne na weekendowy podwieczorek.  Bardzo ciężko jest oprzeć się temu wspaniałemu zapachowi wanilii rozchodzącemu się po domu.


Skłdaniki:
500 g gruszek
1 łyżka likieru groszkowego (opcjonalnie)
sok z 0.5 cytryny
75 g brązowego cukru
75 g mąki
1 czubata łyżeczka proszku do pieczenia
3 jajka
szczypta soli
50 g roztopionego masła, plus trochę do sparowania formy
1 łyżeczka pasty waniliowej lub ziarenka z laski wanilii

Metoda:
Piekarnik rozgrzej do 170C (z obiegiem). Przygotuj formę.
Gruszki pokrój i zalej sokiem z cytryny i likierem. Odstaw na chwilę.
Ubij białka ze szczyptą soli, powoli dodając cukier. Następnie dodaj żółtka, mąkę, proszek do pieczenia i pastę waniliową. Dodaj gruszki z całym sokiem. Przelej do formy i piecz przez 50 minut. Zostaw chwilę do ostygnięcia i wcinaj. Wiem, że nie będziesz w stanie się dłużej oprzeć:-)

Penne with Spinach Gnocchi


 After Christmas and New Year I suggest a vegetarian diet for at least a week.
Gnocchi are delicius and light and make a fantastic accompaniment to pasta dish.

Po świętach Bożego Narodzenia i Sylwestrze proponuję wegetariańską dietę przynajmniej przez tydzień.
Gnocchi są samczne i lekkie i fantastycznie smakują z makaronami.




Ingredients:
Penne,

For spinach gnocchi:
450 gr frozen spinach (chopped)
1 onion,
1 garlic clove,
1/4 teaspoon ground nutmeg,
200 gr mascarpone cheese,
3/4 cup all-purpose flour,
3 egg whites

Składniki:
Makaron Penne

450 gr mrożonego szpinaku (posiekanego),
1 cebula,
1 ząbek czosnku,
Ser mascarpone,
1/4 łyżeczki gałki muszkatołowej,
3/4 mąki,
3 białka

Tomato sauce:
1 onion (chopped)
1 red pepper, seeded and diced
1 garlic clove (crushed)
Can whole peeled tomatoes,
1 tablespoon tomato paste,
1 teaspoon  sugar,
1 teaspoon dried oregano
salt and black pepper.
Olive oil

Sos pomidorowy:
1 cebula (posiekana),
1 czerwona papryka (oczyszczona z nasion i posiekana),
1 ząbek czosnku (zgnieciony),
Puszka pomidorów,
1 łyżka przecieru pomidorowego,
1 łyżeczka cukru,
1 łyżeczka oregano
Sól i pieprz.

To make tomato souce put onion, garlic and pepper ia a pan.  Add two tablespoon of olive. Cook 5 min. Add the tomatoes, tomato paste , bring to boil, stirring occasionally until tender.

Aby zrobić sos pomidorowy dodaj cebulę, czosenk i paprykę na patelnię. Dodaj 2 łyżki oliwy. Gotuj 5 minut. Dodaj pomodory, przecier pomidorowy, poczekaj aż się zagotuje, od czasu do czasu pomieszaj.

Put spinach, onion and garlic in a saucepan, cover and cook until the spinach is defrosted. Remove the lid and increase the heat. Season with salt, pepper and nutmeg.
Cool in a bowl. Add flour and 3 egg whites and cheese. Shape into ovals and refrigerate for 30 min.

Cook the gnocchi in boiling salted water for about 5 min. Remove with a slotted spoon and drain.
Cook penne in a pan until al dente.
Transfer to serving plates and top with gnocchi and tomato souce.


Włóż szpinak, cebulę i czosnek do garnka, przykryj i gotuj, aż szpinak się rozmrozi. Zdejmij przykrywkę i zwiększ ogień. Polós, popieprz i dodaj gałki muszkatołowej.
Potem ostudź w misce, dodaj mąkę i jajka oraz ser, uformuj małe owalne kotleciki i włóż do lodówki na 30 min.

 Gotuj gnocchi we wrzącej posolonej wodzie przez około 5 min.  Wyciągnij je cedzakiem i wysusz.
Ugotuj penne w garnku, żeby było al dente.
Przenieś na talerz na wierzch połóż gnocchi i sos pomidorowy.

Turkey Burgers - Burgery z Indyka



Happy New Year! Szczęśliwego Nowego Roku!

There is a big possibility that today is a hangover day. Celebrating New Years Eve until early morning hours can leave us with a headache. One of the best medicine for that (according to my own experience) is to eat nutritious, healthy food. Turkey burgers are a very nice alternative to a standard beef burgers. I packed them with veg to maximise amount of vitamins.

Makes 5 burgers:
200 g turkey breast
1/3 red onion 
1 clove of garlic
3 yellow sweet baby peppers (or one big)
big handful of parsley leaves
1 tablespoon of tomato paste
3 slices of soft cheese (I had danish blue but brie would be nice too)
3 slices of prosciutto or other ham of this type
salt and pepper
Gluten free flour for dusting the burgers
olive oil for frying

Cut the turkey breast into smaller pieces and put them into a food processor with all other ingredients. Mix it all until everything is quite smooth. With wet hands form the burgers and lightly dust them in the flour. Fry for about 4-5 minutes on each side. Enjoy with fresh salad leaves and rice.



Wiele osób dziś cierpi na kaca:-) Imprezy do wczesnych godzin rannych mogą pozostawić skutki uboczne w postaci bólu głowy. Według mnie jednym z najlepszych lekarstw na tę dolegliwość jest zdrowe, pełne wartości odżywczych jedzenie. Burgery z indyka są dobrą alternatywą standardowych burgerów. Dodałam do nich warzywa aby zmaksymalizować ilość witamin.

Na 5 burgerów: 
200 g piersi z indyka
1/3 czerwonej cebuli
1 ząbek czosnku
3 małe żółte, słodkie papryki (lub jedna większa)
spora garść natki pietruszki
1 łyżka przecieru pomidorowego
3 plasterki miękkiego sera (ja miałam danish blue ale można dodać brie)
3 plastry prosciutto albo innej szynki tego typu
sól i pieprz
mąka bezglutenowa do obtaczania burgerów
oliwa z oliwek do smażenia

Pokrój pierś z indyka na mniejsze kawałki i wrzuć do malaksera z resztą składników. Miksuj na dosyć gładką masę. Zwilżonymi rękoma formujemy burgery i obtaczamy w mące. Smażymy z każdej strony ok 4-5 minut. Bardzo pasuje do tego ryż i zwykła sałata.

Traditional Polish Christmas Eve meal - Barszcz with Pierogi :-)

This time of the year is very busy for everyone. Preparation for this special meal can take up a lot of time. But it is so worth it!!! I usually make my pierogi a few days in advance and freeze them. That way I have a few more hours on Christmas Eve to do some other things (eg: painting nails red or some other very important tasks:-)) This is my family recipe with my little twist. I really hope you will try it out!



For the Pierogi (I made 60 of them)
3 glasses of flour
300 ml of very warm water
500 g sauerkraut
a handful of dried wild mushrooms (I had porcini)
250g button mushrooms
1 big onion
salt and pepper
1 shot of vodka (I used polish Żubrówka) - this is optional, you can also substitute it with cognac
1 tablespoon of butter

You probably should start with the filling first. Boil sauerkraut with wild mushrooms for about 15-20 minutes, you just want to make sure the cabbage is soft. Grate the cup mushrooms and chop the onion. Fry it until tender with the butter and a little pinch of salt. Drain the cabbage and wild mushrooms, chop it a little bit. Mix with the onion and mushrooms and fry for a couple of minutes. You can pour the water from a boiled sauerkraut and porcini. It is very aromatic so you don't really want to lose it. Finally add in a shot of vodka. The key here is to make sure that the mix is quite dry. Season to taste and let it cool down completely.
 For the dough, combine the flour with water and a big pinch of salt. Knead the dough until it is smooth and stretchable. Roll the dough into a very thin sheet. Cut the round shapes using a glass. Place a teaspoon of filling in the centre and 'glue' the edges to make the pierogi. Continue folding  until you have them all  ready to boil. Boil in the a big pan of simmering water with added olive oil and salt. Boil for 3 minutes, until pierogi are floating on the surface.
Once cooled down, I like to fry them with bacon. The skin gets crispy and so yummy, you can't resist having one or two more...:-)



Now let's move on to the barszcz!

For 2litres you will need:
2 raw beetroots (grated)
1 carrot (grated)
0.5 leek (chopped)
2 stalks of celery (chopped)
2 litres of vegetable stock
salt and pepper 
pinch of marjoram
bay leaf and all spice to taste
1 tablespoon of brown sugar
juice of half a lemon
little bit of lemon zest

Pour the vegetable stock over all vegetables, marjoram, bay leaf and all spice and boil just for 5 minutes. Turn off the heat and let it infuse for few hours. After that time drain the veg to have a clear soup. Add sugar, lemon juice and zest. Serve it hot with pierogi or drink on its own in a mug,
