Avocado Mayonnaise / Majonez z awokado

When it comes to avocados, I can admit that I am addicted. Avocado contains oleic acid, so it lowers cholesterol and potassium contained in avocados regulates blood pressure.

Jeśli chodzi o awokado to jestem uzależniona. Awokado zawiera kwas oleinowy, który obniża cholesterol. Zawiera też potas, który reguluje ciśnienie krwi.

Ingredients:

1 avocado (medium to large)
juice of 1/2 lemon
1/4 teaspoon salt (or to taste)
1 pinch cayenne pepper (optional)
1-2 tbsp extra virgin olive oil
basil leaves

How to make:

Scoop out the flesh of one avocado and put it into the blender. Add lemon juice, salt, and cayenne pepper and basil leaves then blend together. With blender running, add olive oil slowly. Stop it periodically to ensure all ingredients are blending properly.  Puree to a smooth creamy mixture.

Składniki:

1 duże awokado,
sok z cytryny,
1-2 łyżki oliwy
sól
pieprz
kilka listków bazylii

Jak zrobić:

Przekroić awokado na pół i wyciągnąć z niego miąższ, włożyć do blendera. Dodać sok z cytryny, bazylię, posolić, popieprzyć. Potem dodawać oliwę. Należ blendować, aż powstanie jednolita masa, przypominająca majonez. Przełożyć do słoiczka i gotowe. Można dodać do jajek, do sałatek na kanapki.

Curry with Eggplant with Cardamom and Coconut Milk

I just love curry, I make curry at least once a week.  This curry is my current favorite use for the  eggplant. The eggplant helps to thicken the sauce, made creamy from coconut milk.

2 pounds eggplant
3 tablespoons olive oil
salt, as needed
2 yellow onion (from 2 medium or 3 smaller onions)
8 green cardamom pods, cracked
1 tablespoons coriander seeds
1 tablespoons garam masala
1 teaspoon black peppercorns
1 tablespoon ground turmeric
4 large garlic cloves, peeled
1 teaspoon of ginger
3 tomatoes
1  can coconut milk
1/2 cup water
a few handfuls cilantro leaves, chopped
a handful mint leaves, slivered
1 pint whole milk (Greek) yogurt, for serving
For the rice:
2 cups long-grain basmati rice
3 1/2 cups water, plus more for rinsing the rice
1 teaspoon fine sea salt
Roast the eggplant:
Position racks in the upper and lower thirds of the oven and preheat to 210º. Slender variety of eggplant, cut on the diagonal into thick slices. Pile the eggplant slices on a rimmed baking sheet and sprinkle with the olive oil and 1/2 teaspoon salt. Toss to coat with your hands. Spread the eggplant pieces on two baking sheets, and roast until golden on the bottoms, about 15 minutes. Use a thin metal spatula to flip the slices over, and roast until tender and golden, 5-10 more minutes. Remove and turn off the oven.

 Make the curry:
Heat the oil in large soup pot or dutch oven over a medium flame until it shimmers. Add the onion and cardamom pods and coriander seeds. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are golden and tender, 10-15 minutes. Add black peppercorns.
When the onions are soft, stir in the ground spice mixture, turmeric, garlic, and ginger. Cook for a few minutes to toast the spices, then stir in the chopped tomatoes, coconut milk, water, and the roasted eggplant. Increase the heat to bring the curry to a simmer, then reduce the heat and simmer gently for 20-30 minutes, stirring occasionally. When finished, the eggplant should still hold its shape, but the sauce around it should be slightly thickened stew-like. It will thicken further if allowed to sit and cool.
Serve with rice and yogurt.

Pizza

1 szklanka mleka,
Drożdże,
Łyżka cukru,
Sól,
3 łyżki oliwy

Na wierzch pizzy:
Przecier pomidorowy, dodałam taki z kartoniku,
Ser, może być mozzarella,
Cebula,
Salami,
Oregano.

Oczywiście można zrobić pizze inaczej, według własnych upodobań, ale polecam to ciasto. Jest smaczne, ma świetny kolor wychodzi wspaniale.

Do garnuszka wlać szklankę mleka dodać łyżkę cukru i 30 dg drożdży. Lekko podgrzać, ja nastawiam płytę indukcyjną na 6 w skali  1-9 na jedną minutę.

Przesiać do miski 2,5 szklanki mąki, przesianie jest bardzo ważne trzeba napowietrzyć mąkę. Następnie dolać mleko z drożdżami, dodać jedno żółtko, 3 łyżki oliwy i sól do smaku.

Truffles

I love making dark chocolate truffles at home. Let’s be honest, this is a "dirty job" and a little fancy, too ;)

Kocham robić w domu trufle z ciemnej czekolady,  ale szczerze mówiąć jest to dość "brudna robota", ale także luksusowa ;)

Ingredients:

Dark chocolate 200 gr
Butter 100 gr.
1/4 - 1/2 cup cocoa powder for dusting
Yolk,

Instructions:

Chop the dark chocolate into tiny pieces and place in a large heat proof bowl.
Heat the butter in a small saucepan over medium heat until gently simmering. Remove from the heat and pour the mixture over the chopped chocolate ; stir well to combine, whisking until chocolate is completely melted. Add yolk. Pour the mixture into a small glass dish and set in the refrigerator for at least 1 hour.

Place the cocoa powder on a large clean plate.  Remove the truffles from the refrigerator, roll each one in the cocoa powder, and shape into balls by rolling between the palms of your hands. Add more cocoa powder if they get too sticky. You can keep them in the fridge 5 days.

 Składniki:

Gorzka czekolada 200gr,
Masło 100 gr.
1/4-1/2 kakao, jako posypka.
1 żółtko.

Wykonanie:

Pokroić drobno czekoladę i  wsypać do  żaroodpornego naczynia. Podgrzać masło w małym garnuszku. Zdjąć z ognia i pomieszać czekoladę z masłem, do utworzenia się jednolitej masy, wbić w to żółtko i całość wymieszać.  Włożyć masę do lodówki i chłodzić około 2 godziny.

Kakao wsypać do miseczki. Wyjąć masę truflową z lodówki uformować nieregularne kuleczki palcami i obtoczyć dokładnie w kakao. Następnie oblizać paluszki. Można trzymać je w lodówce do 5 dni.
